Hainanese Chicken Rice -- Serves 4
Ingredients: Soyabean oil, garlic, lemongrass, ginger, shallot, slat.
Direction: - 1 packet Asian Home Gourmet Singapore Hainanese Chicken Rice SpicePaste© - 450g (1 lb) boneless chicken thighs - 380ml (1 3/4 cups) water - 250g (1 1/2 cups) uncooked rice - soya sauce and sesame oil to taste (optional) Using Rice Cooker:
1. Put rice, water and Spice Paste in rice cooker. Mix well. 2. Place chicken on top of rice mixture. Set for cooking. 3. Leave to stand for 5 -10 minutes before serving. Using Stove Top Cooking: 1. Bring 730ml (3 1/3 cups) water to a boil in saucepan. Add 450g (1 lb) chicken meat; cover and simmer until cooked. Remove chicken and cut into pieces. Season to taste and set aside. Reserve 500ml (2 1/2 cups) chicken stock. 2. Mix rice, chicken stock and Spice Paste in saucepan. Bring to a boil and stir once. Reduce heat; cover and cook for 12 minutes or until cooked. Follow step 3 above.
