The word agar comes from the Malay word agar-agar (meaning jelly). It is also known as kanten, agal-agal (Ceylon agar), or China grass. It is derived from a number of seaweeds (Gelidium amansii) which are processed by boiling and drying. Agar-agar is a very popular dessert in Asia.
Agar is a low calorie material that contributes to dietary fiber and is believed to have prebiotic properties in stimulating beneficial, naturally-occuring microflora in the human intestinal tract.
